How founder Mike Thompson turned a childhood dream into a thriving business while staying true to his values, his community, and his commitment to quality.






Sometimes the sweetest success stories begin with a childhood dream.

For Mike Thompson, founder and Chief Pops Officer of Pedal Pops, that dream was opening an ice cream shop. After spending nearly 20 years in corporate accounting, he decided it was finally time to pursue his passion. What started as a vision for an ice cream business quickly evolved into something even more unique when unexpected health department regulations forced him to rethink his original plan. Rather than giving up, Mike pivoted almost overnight to handcrafted frozen fruit pops, unknowingly laying the foundation for what would become one of Northwest Arkansas' most recognizable local brands.


Founded in 2011, Pedal Pops has grown organically from humble beginnings at local farmers markets to a thriving Farmington business that manufactures all-natural fruit bars, ice cream pops, coconut-based treats, and adult "boozy" pops. Longtime customers still remember seeing Mike riding a tricycle through Bentonville's downtown square selling pops by hand—a nostalgic image that reflects the authenticity and determination behind the business. What started as one person sharing frozen treats has grown into a destination that serves families, local businesses, and visitors from across the region. That authenticity remains at the heart of Pedal Pops today. While many frozen treats rely on artificial flavors, colors, preservatives, gums, and added sugars, Pedal Pops has built its reputation on clean, simple ingredients. A signature Strawberry Mango pop contains just strawberries, mangoes, lemon juice, water, and stevia. As the business has grown, Mike has repeatedly been encouraged to alter his recipes to make large-scale production easier, but he has never been willing to compromise.

"People have told us that to grow, we need to degrade our product. We don't want to do that. We want something that truly sets us apart."

That commitment to quality has earned the trust of families across the region while opening new opportunities with wholesale partners, health food retailers, universities, camps, and Arkansas State Parks. For Mike, however, one of his proudest milestones wasn't landing a major account—it was reaching the point where customers and organizations began seeking Pedal Pops out instead of the other way around.

"When people started coming to us for events instead of us chasing sales, that was when I realized we had built something people genuinely wanted."

Today, Mike and his partner, Lynn Wong, have expanded their vision far beyond frozen treats. Their Farmington location is home to Pedal Park, a community gathering space where families can enjoy locally made food, live events, food trucks, craft beverages, and time together. The park has also become a launching pad for other entrepreneurs, with several food truck owners getting their start there before expanding into successful businesses of their own. It reflects Mike's belief that strong communities are built when small businesses support one another.


"We've always wanted Pedal Pops to be more than frozen treats. We want it to be a place where people can come together, celebrate life, spend time with family, and build a stronger community."

As Pedal Pops approaches full production capacity, Mike knows the next stage of growth isn't simply about making more pops—it's about building smarter systems without sacrificing the values that got the company here. That's what led him to RAMP.

After participating in other accelerator programs, Mike found RAMP's peer-to-peer learning environment especially valuable. Rather than simply listening to presentations, he appreciates the opportunity to collaborate with fellow entrepreneurs facing many of the same operational challenges.


"Hearing how other entrepreneurs have solved problems we're facing has been incredibly helpful. It gives you ideas you can actually apply."

Through RAMP, Mike hopes to strengthen operations, improve staffing strategies, streamline production, and prepare Pedal Pops for thoughtful, sustainable growth. Instead of chasing rapid expansion at any cost, his goal is to become more efficient while preserving the quality, authenticity, and community focus that define the company.

Mike's story is a reminder that entrepreneurship isn't always about growing as fast as possible, it's about growing with intention. From selling pops on a tricycle to building a beloved community destination, Pedal Pops has become more than a frozen treat company. It's proof that staying true to your mission, investing in your community, and never compromising your values can be a recipe for lasting success.
